In old Napa Valley farmers would plant where they felt it be appropriate, hedging their guess that mother nature was going to agree with them. At Carium Estates our family holds tight to this old tradition and named the winery after our matriarch of the family Carrie ‘Cari’ Umile

VINEYARDS
& WINEMAKING

Knowledge and experience, gained from 3 generations of farming, our winemaker has guided many choices of rootstock, grape varietal and clones that match the soil changes of each vineyard site. Mainly hillside volcanic soils in the Vaca Mountain range from the eastern hills of St Helena through the Stags Leap District to the Coombsville AVA. The best parcels selected from some of the best vineyards.Multiple Cabernet Sauvignon blocks, each established with specific rootstock and clones to match the unique soil conditions, total 10 acres. 1 acre of Malbec and ½ acre of Cabernet Franc make up the remaining plantings. Low soil fertility and southern exposure helps create ideal conditions that produce fruit with great concentration and complexity. Decades of farming knowledge, combined with the latest viticulture science, guide their sustainable farming practices. They meticulously tend to every vine throughout each season to ensure only grapes of the highest quality are harvested.

The 2022 growing season in Napa Valley told a story of resilience and reward. A wet winter replenished vineyard soils, followed by a warm, dry summer that built concentration across the valley floor. September's brief heat spike and rain tested growers' timing—those who harvested with precision were rewarded with fruit of exceptional depth. Oakville contributed power and structure, St. Helena added dark fruit richness, and Yountville lent its signature textural elegance.

Deep garnet in the glass, this Cabernet opens with aromas of blackberry, cassis, and dark cherry layered with cedar, tobacco leaf, and baking spice. Full-bodied and generous on the palate, concentrated dark fruit is framed by firm, well-integrated tannins.
